Travel the world through food 11/02 - Cuba

This week we are visiting Cuba. Of course, the best way to get to the heart of a culture is through its cuisine. In Cuba, rice, beans, and plantain are offered as a side dish to almost every meal.
Our Cuban inspired menu this week consisted of
Pernil Relleno de Moros y Cristianos
A pork shoulder is marinated in orange juice, garlic, oregano, and pepper and then filled with rice and beans and cooked in the oven.

Arroz Con Pollo (Rice with Chicken)
The Cuban version of paella, but without the seafood.
(Vegetarian available - sub with plant-based protein)
Maduros
Ripe plantain that is slowly cooked in oil till they become caramelized: they are soft, sticky, juicy, and delicious.
