This week we are exploring the winter in Italy. Even when it's not summer, where eggplants, tomatoes, and peppers are only in our dream, Italians still eat well. Here are our favorite regional Italian winter dishes.


Ribollita (Vegetarian)

A classic dish of Toscana, a hearty winter vegetable soup. Kale, potatoes, and carrots in broth thickened with dry bread.

Beef Ragù Polenta

A staple of northern Italy, Polenta, served as a hot porridge with cheese and braised beef ragù.

Baked chicken gnocchi (Sub winter squash for vegetarian)

Pillowy gnocchi, in a creamy garlic Alfredo sauce, shredded chicken, and spinach. All finished with parmesan and plenty of black pepper.
